The magnet test, and what to do if your pan fails

The test

Hold a fridge magnet to the bottom of the pan. If it sticks firmly, induction can heat it. If it sticks weakly or not at all, it will heat poorly or not at all.

If a pan fails

  • Replace it with a magnetic pan (cast iron, carbon steel, magnetic stainless).
  • Or use an induction interface plate — check its maker's notes.

  • Burners with auto pan detection shut off after about 60 seconds without cookware.
  • Some clad pans can make a high-pitch sound.
